Zucchini Roll Ups with Goat Cheese and Harissa

There’s an undeniable charm and appeal to tiny food. Whether it’s the elegant presentation, the ease of enjoyment, or simply the delightful surprise packed into each small bite, appetizers and small plates often steal the show on any menu. They invite creativity, allowing chefs and home cooks alike to experiment with bold flavor combinations without the commitment of a full entree. These Zucchini Roll Ups are a perfect example, delivering an explosion of vibrant tastes and textures in a single, irresistible package, ideal for any summer gathering.

The Allure of Appetizers: Why Small Bites Win Hearts

The universal love for appetizers often boils down to a fundamental principle: the law of diminishing returns. The first bite of any dish is typically the most thrilling, the most impactful, and the most satisfying. Small plates capitalize on this by offering a succession of “first bites,” ensuring that each morsel delivers peak flavor and excitement. This approach keeps the palate engaged and leaves you wanting just a little bit more, creating a truly memorable culinary experience. These zucchini rolls, with their unexpected yet harmonious blend of spicy, tangy, and fresh notes, are crafted to be just that – little parcels of flavor that leave a lasting impression.

Sliced Zucchini

While my mind usually drifts to Mediterranean or Italian profiles when contemplating zucchini, the goal for this recipe was to venture into something truly distinct and exhilarating. The idea blossomed from a simple desire to use harissa paste in a novel way, coupled with my long-standing affection for goat cheese and, surprisingly, a nostalgic encounter with a fruit roll-up! Sometimes, the most delicious creations emerge from a whimsical jumble of thoughts and inspirations, proving that culinary magic can be wonderfully uncomplicated.

Spotlight on Zucchini: The Versatile Summer Squash

Zucchini is a marvel of summer produce, known for its mild flavor and incredible versatility. It serves as a fantastic canvas for stronger, more dynamic tastes, making it an ideal choice for these roll-ups. When selecting zucchini for this recipe, look for long, firm specimens at least an inch in diameter – these will yield the most uniform and pliable slices. The key to successful zucchini roll-ups lies in proper preparation, specifically slicing and grilling. Using a mandoline is highly recommended for achieving consistent, paper-thin ⅛-inch slices, which are crucial for flexibility when rolling. This uniformity ensures even cooking and a beautiful presentation.

After slicing, a light salting of the zucchini is essential. This step draws out excess moisture, preventing the rolls from becoming watery or soggy and concentrating the zucchini’s delicate flavor. After a brief rest, blotting the slices dry ensures they’ll grill beautifully and absorb the olive oil for a perfect sear. Grilling them quickly imparts a smoky depth and makes them wonderfully tender, ready to be filled and rolled into delightful appetizers.

A Symphony of Flavors: Harissa, Goat Cheese, Lime & Mint

The filling for these zucchini roll ups is where the true magic happens. It’s a carefully balanced blend of spicy, tangy, and refreshing elements that work in perfect harmony.

Harissa: The North African Spice Powerhouse

At the heart of the filling is harissa paste, a North African chili paste renowned for its complex and aromatic heat. Originating from Tunisia and Morocco, traditional harissa is typically made from roasted red peppers, Baklouti peppers, serrano peppers, or other chili peppers, along with olive oil and spices like caraway, coriander, and garlic. It’s more than just a spicy kick; it adds a smoky, earthy, and richly fragrant dimension that elevates the entire dish. Its fiery notes are beautifully tempered by the creamy goat cheese, creating an exciting contrast that will tantalize your taste buds.

Goat Cheese: Creamy Tanginess

Soft goat cheese, or chèvre, provides the creamy base for our filling. Its distinctive tangy, slightly earthy flavor pairs exceptionally well with the boldness of harissa. When at room temperature, goat cheese is wonderfully spreadable, making the assembly process smooth and enjoyable. Its rich texture also acts as a perfect counterpoint to the fresh, crisp zucchini, ensuring each bite is satisfying and well-rounded.

Fresh Lime: Zest and Zing

The addition of fresh lime is crucial for brightening the overall flavor profile. Both the zest and the juice are used. Lime zest provides an intense aromatic burst and a citrusy perfume that permeates the filling, while a touch of fresh lime juice adds a vibrant acidity that cuts through the richness of the goat cheese and the heat of the harissa. This citrusy zing prevents the flavors from becoming too heavy, keeping the appetizer light and refreshing, especially for summer.

Mint Leaves: The Cooling Counterpoint

Finely minced fresh mint leaves are the final, essential component, offering a burst of cool, aromatic freshness. Mint’s herbaceous notes complement the lime beautifully and provide a refreshing counterpoint to the spicy harissa. It’s this refreshing quality that makes these roll-ups particularly suited for warm weather entertaining, providing a delightful cooling sensation with every bite.

Crafting Your Zucchini Roll Ups: A Step-by-Step Guide

Despite their elegant appearance, these zucchini roll ups are surprisingly simple to prepare. The most time-intensive part is the initial preparation of the zucchini, but even that is made effortless with the right tools and techniques.

Preparing the Zucchini

  1. **Slice with Precision:** Start by carefully slicing your zucchini lengthwise into ⅛-inch thick strips. A mandoline slicer is truly your best friend here, ensuring uniform thickness for even cooking and easy rolling.
  2. **Salt for Success:** Arrange the slices on a large rimmed baking sheet and sprinkle both sides lightly with kosher salt. Let them sit for about 10-15 minutes; this crucial step draws out excess moisture, preventing your roll-ups from becoming watery and concentrating the zucchini’s flavor.
  3. **Blot and Brush:** Once the zucchini has released its moisture, gently blot each slice thoroughly with paper towels. Then, lightly brush or drizzle both sides with extra virgin olive oil. Use your hands to ensure each strip is evenly coated, preparing them for the grill.

Making the Harissa Goat Cheese Filling

While your zucchini is resting, prepare the flavorful filling:

  1. **Combine Ingredients:** In a medium bowl, combine the room-temperature soft goat cheese, harissa paste, finely minced fresh mint leaves, extra virgin olive oil, fresh lime zest, and fresh lime juice.
  2. **Season to Taste:** Mix until all ingredients are well incorporated and creamy. Taste and adjust seasoning with additional salt and freshly ground black pepper as needed. The goat cheese should be soft enough to blend easily, so ensuring it’s at room temperature is key.

Grilling the Zucchini

  1. **Preheat Your Grill:** Heat a grill pan over medium heat, or prepare an outdoor grill.
  2. **Grill in Batches:** Add the zucchini slices to the hot pan in batches, ensuring not to overcrowd it. This allows for proper searing and prevents steaming. Grill each side for 1-2 minutes until tender with visible grill marks, but still slightly firm.
  3. **Handle Gently:** Once grilled, the zucchini will be delicate. Carefully remove the slices and arrange them on a clean plate or baking sheet to cool slightly.

Assembling the Roll Ups

  1. **Spread the Filling:** Lay a grilled zucchini slice flat on your work surface. Using a butter knife or a small offset spatula, spread a very thin, even layer of the harissa goat cheese mixture over the entire surface. Remember, a little goes a long way – you want the flavors to complement, not overpower, the zucchini.
  2. **Roll and Repeat:** Starting from one end, carefully roll the zucchini slice into a small, tight cylinder. Place the finished roll-up seam-side down on a serving platter. Repeat this process with the remaining zucchini slices and filling until all are assembled.

Serving Suggestions & Variations for Your Appetizer

These Zucchini Roll Ups are best served at room temperature, allowing their intricate flavors to fully develop and shine. For an extra touch of elegance and flavor, consider drizzling them with the optional Harissa Lime Mint Vinaigrette. This light dressing adds another layer of zest and subtle heat, tying all the flavors together beautifully.

Optional Vinaigrette Topping

To prepare the vinaigrette, simply whisk together extra virgin olive oil, chiffonade of mint leaves, fresh lime juice, a hint of harissa paste, kosher salt, and freshly ground black pepper in a small bowl until a broken emulsion forms. Drizzle lightly over the assembled rolls just before serving.

Creative Variations

While the recipe itself is perfect, don’t hesitate to experiment with variations:

  • **Herb Swap:** Try fresh basil or cilantro instead of mint for a different aromatic twist.
  • **Cheese Alternatives:** If goat cheese isn’t your preference, a creamy feta, whipped ricotta, or even a blend of cream cheese and parmesan could work, though they would alter the flavor profile significantly.
  • **Added Crunch:** A sprinkle of toasted pine nuts or finely chopped pistachios inside the roll could add a delightful texture.
  • **Extra Kick:** For those who love more heat, a pinch of red pepper flakes in the filling would provide an extra spicy punch.
  • **Sweet Touch:** A tiny drizzle of honey or agave nectar over the finished rolls could offer a sweet-savory contrast that is surprisingly delicious.

Zucchini roll ups filled with a spicy harissa goat cheese mixture infused with fresh lime and mint leaves. A fun bite-sized appetizer for summer entertaining!

Ingredients

Zucchini Bites:

  • 1 lb (16 oz) zucchini, preferably long and at least an inch in diameter sliced into ⅛- inch thick lengths, roughly 2 zucchini
  • extra virgin olive oil
  • 8 ounces soft goat cheese room temperature
  • 2 teaspoons harissa paste
  • 2 tablespoon finely minced fresh mint leaves
  • 2 teaspoons extra virgin olive oil
  • 1 teaspoon fresh lime zest
  • ½ teaspoon fresh lime juice
  • kosher salt
  • freshly ground black pepper

Optional Vinaigrette Topping:

  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon chiffonade of mint leaves
  • 2 teaspoons fresh lime juice
  • ¼ teaspoon harissa paste
  • kosher salt
  • freshly ground black pepper

Instructions

  • Using a mandolin, carefully slice the zucchini lengthwise into ⅛-inch thick slices. Set the slices aside on a large rimmed baking sheet and lightly sprinkle on both sides with salt.
  • In medium bowl, combine the room temperature goat cheese, harissa paste, fresh mint, olive oil, lime zest and juice. Season with salt and pepper to taste.
  • Blot the zucchini slices to remove any excess moisture, and lightly brush or drizzle with extra virgin olive. Use your hands to carefully toss the zucchini, so each slice is lightly covered.
  • Preheat a grill pan over medium heat. Add slices in batches, allowing them to sear on each side without overcrowding the pan. Carefully remove and set aside on a large plate or clean baking sheet (once the zucchini is grilled, it will be much more delicate, so be careful not to manhandle them too much.).
  • Assemble: One at time, lay the zucchini slices on a work surface and using a butter knife or small offset spatula, spread a very thin layer of the goat cheese mixture evenly onto each slice (not too much, as you don’t want to overpower the flavor of the zucchini). Starting with one end, roll into smal, tight rolls and set aside on a plate. Repeat with remaining zucchini slices.
  • Prepare the Vinaigrette, If Using: Whisk together the viniagrette ingredients in a small bowl until a broken emulsion forms.
  • Drizzle a serving platter lightly with the vinaigrette (optional), top with the zucchini rolls, and serve at room temperature.

Tips for Success:

  • If necessary, the rolls can be made several hours ahead of time and kept in the fridge covered with plastic wrap. They are best served at room temperature.
  • The addition of fresh mint and lime juice helps brighten up the flavors and pairs extremely well with the spicy harissa and tangy goat cheese. Perfect summer entertaining food, if you ask me.
