Why Brussels Sprouts Deserve a Spot on Your Plate
When it comes to Thanksgiving sides, or really any meal that calls for a robust and flavorful vegetable, where do your loyalties lie? For me, Brussels sprouts are an undeniable obsession. I’ve dedicated countless hours to perfecting various Brussels sprout recipes over the years, even hosting a memorable “Brussels Sprouts Week” a while back. Since then, I’ve had to consciously rein in my enthusiasm for these adorable green gems, but some recipes are just too good not to share.
It fills me with pride that one of the most cherished recipes on this site is a Brussels sprout creation. My roasted Brussels sprouts and squash with dried cranberries and Dijon vinaigrette will forever grace my Thanksgiving table. However, for those who crave an intensely savory, sweet, and smoky experience, these maple bacon Brussels sprouts offer an equally captivating and utterly irresistible alternative, especially for the bacon aficionados among us.
The Irresistible Allure of Maple Bacon Brussels Sprouts
Imagine perfectly tender-crisp Brussels sprouts, kissed with a golden caramelization, mingling with crispy, salty bacon bits. Now, picture that symphony of flavors enhanced by the rich sweetness of pure maple syrup and the subtle tang of balsamic vinegar. That’s exactly what these maple bacon Brussels sprouts deliver. This dish isn’t just delicious; it’s ingeniously simple, requiring only four core ingredients and minimal effort, making it an ideal choice when you need a show-stopping side without the stress.
One of the greatest advantages of this recipe, particularly during busy holiday cooking, is that it requires absolutely zero oven space. This frees up your oven for other main courses or baked goods, allowing you to seamlessly integrate this stellar side into even the most crowded kitchen schedule. With its fantastic ease of preparation and simple ingredient list, this dish is a fabulous last-minute idea for any grand celebration or a cozy family dinner.

A Culinary Collaboration: Jennifer Farley’s “The Gourmet Kitchen”
This phenomenal recipe comes courtesy of my dear friend, Jennifer Farley, and her magnificent new cookbook, The Gourmet Kitchen. Jennifer, the brilliant mind behind the popular blog Savory Simple, and I share an uncanny number of parallels in our culinary journeys. Both of us grew up in the vibrant Washington, D.C. area and, by a remarkable coincidence, attended the exact same culinary school, L’Academie de Cuisine, within a year of each other. It’s a shame our paths didn’t cross until just before my move to Chicago, but I couldn’t be more absolutely thrilled for Jen and the tremendous success of her debut cookbook!
I’ve already delved into the book and whipped up a handful of her recipes – the caramel apple pound cake, for instance, was an absolute dream! And trust me, I’m eagerly anticipating cooking many more dishes from its pages. The Gourmet Kitchen masterfully celebrates elegant, special-occasion recipes, yet Jennifer has also ensured that many of them are simple and straightforward enough to prepare on even the busiest of weekdays. In fact, I had to consciously stop myself from bookmarking every single recipe because I was literally highlighting the entire book! Jennifer and I possess incredibly similar tastes in food, and her talent for creating meticulously tested, thorough, and incredibly easy-to-follow recipes is truly exceptional.
Beyond the flawless instructions, each recipe in The Gourmet Kitchen is accompanied by a breathtaking, full-page photograph that eloquently showcases Jennifer’s extraordinary gift for food photography. These stunning visuals truly speak volumes and serve as a beautiful invitation to dive into her culinary world. These maple bacon Brussels sprouts are no exception, looking as tantalizing on the page as they taste in real life.

The Secret to Sensationally Crispy Brussels Sprouts: High Heat Cooking
Let’s talk about the absolute fundamental key to preparing Brussels sprouts that are not merely good, but truly tasty, addictive, and crave-worthy: cooking them over consistently high heat. Whether you’re using an oven for roasting or a sturdy sauté pan on the stovetop, intense heat is your best friend. For the love of all that is culinary, please, I implore you, resist the urge to steam or boil your sprouts. Just don’t do it! These methods often lead to sad, mushy, and sometimes even sulfurous-smelling sprouts, completely stripping them of their potential for glorious texture and flavor. I beg of you – embrace the sizzle!
The basic premise behind this particular preparation is wonderfully straightforward and incredibly effective. First, you’ll render the fat from the bacon over low heat, allowing it to slowly release its rich, smoky essence and become beautifully crispy. Once that liquid gold (bacon fat!) is ready, you’ll crank up the heat to high and introduce the halved Brussels sprouts to the pan. This high heat is crucial for achieving that desirable deep caramelization on one side of the sprouts, which brings out their natural sweetness and gives them a fantastic texture.
Next, the pan is deglazed with sweet and tangy balsamic vinegar. This step is twofold: it adds a vibrant layer of flavor and helps to lift all those delicious browned bits from the bottom of the pan, incorporating them back into the dish. Continue to sauté the sprouts briskly, swirling the pan, until they become tender-crisp – never soft or watery. Finally, the star of the show, pure maple syrup, is added along with the crispy bacon, coating everything in a glossy, irresistible glaze. A quick season with salt and pepper, and you’re ready to serve this hot, tantalizing side dish. Prepare yourself, because once you start, you might just eat the entire pan in one sitting!
On that delicious note, consider this fair warning: these maple bacon Brussels sprouts tend to disappear incredibly fast. If you’re serving more than two or three people, or if you simply can’t get enough of them (and trust me, you won’t), I highly recommend doubling or even tripling the recipe. You’ll thank me later!

Ingredients
- 1 lb (16 oz) Brussels sprouts
- 5 slices thick-cut bacon diced
- 2 tablespoons (30 mL) balsamic vinegar
- 2 tablespoons (30 mL) pure maple syrup
- kosher salt
- freshly ground black pepper
Instructions
-
Cut off the root ends of the Brussels sprouts and remove any loose outer leaves. Slice them in half lengthwise.
-
In a large skillet, cook the diced bacon over low to medium-low heat until its fat has mostly rendered and the bacon bits are crispy and caramelized. Remove the cooked bacon with a slotted spoon and set aside on a plate lined with paper towels to drain. Carefully pour out all but 2 tablespoons of the rendered bacon fat from the pan.
-
Increase the heat to medium-high. Add the halved Brussels sprouts to the skillet, cut-side down, and cook without disturbing for several minutes until beautifully caramelized and browned on one side. Deglaze the pan by pouring in the balsamic vinegar, using a spatula to scrape up any flavorful brown bits from the bottom and incorporate them into the sprouts. Continue to sauté the Brussels sprouts on high heat for a few more minutes, tossing occasionally, until they are tender-crisp. Return the reserved crispy bacon to the pan, along with the pure maple syrup. Stir everything together until the syrup evenly coats the Brussels sprouts and bacon. Season generously with kosher salt and freshly ground black pepper to taste. Serve hot and enjoy immediately!
Tips for Success:
- For the best and most distinct flavor, I highly recommend using dark amber (formerly known as Grade B) pure maple syrup. Its robust profile truly elevates the dish!
- Do not overcrowd the pan. If cooking a larger batch, work in batches to ensure the Brussels sprouts caramelize properly rather than steam.
- Ensure your pan is hot before adding the sprouts to achieve that perfect sear and crispy exterior.

Serving Suggestions and Customization
These incredible Maple Bacon Brussels Sprouts are incredibly versatile and can accompany a wide variety of meals, far beyond just holiday gatherings. They are a magnificent partner to roasted chicken, pan-seared pork chops, or even a simple grilled steak. For a more casual meal, try serving them alongside scrambled eggs and toast for an elevated breakfast or brunch experience. You can also toss them into a warm grain bowl for a healthy and hearty lunch, adding a burst of flavor and texture.
While the recipe itself is perfect as is, don’t hesitate to experiment with minor customizations to suit your palate. A pinch of red pepper flakes added with the sprouts can introduce a delightful touch of heat, complementing the sweetness beautifully. A sprinkle of toasted pecans or walnuts at the end can add an extra layer of texture and nutty flavor, enhancing the overall gourmet feel. For a brighter finish, a squeeze of fresh lemon juice just before serving can cut through the richness beautifully, adding a zesty counterpoint. The beauty of this dish lies in its balance, allowing for subtle tweaks without compromising its core addictive appeal.
