Our second day in Cordova concluded with a fascinating tour of the Copper River Seafoods processing facility, one of three major salmon processing plants in this remote Alaskan town. It was here that we witnessed firsthand the meticulous care that elevates Copper River salmon to its legendary status. A defining characteristic, and perhaps the most impactful, is the practice of bleeding and icing nearly all salmon immediately as they are caught out on the water by local Cordova fishermen.

This might seem like a minor detail, but its significance cannot be overstated. This immediate attention drastically impacts the salmon’s quality, preserving its pristine freshness, vibrant color, and exquisite flavor profile. The rapid chilling process prevents bruising and maintains the integrity of the flesh, ensuring that every Copper River salmon that reaches your plate offers an unparalleled culinary experience. An Evening of Alaskan Hospitality: A Fisherman’s Potluck

That evening, after gaining profound insights into the processing of Copper River salmon, we were invited to a truly special event: a potluck dinner hosted by fisherman Bill and his wife Renee Lindow. This was more than just a meal; it was an intimate glimpse into the heart of the Cordova fishing community. We savored incredible Coho salmon sashimi, its buttery texture melting in our mouths, and perfectly grilled salmon infused with miso butter. As we gathered around the dinner table, the air filled with the rich aroma of fresh fish and the lively chatter of stories from various fishermen and women. These shared moments, hearing firsthand accounts of life on the Alaskan waters, were undeniably some of the most memorable highlights of the entire trip, fostering a deep connection to the people behind the product.

The culinary delights continued with homemade desserts prepared using local foraged berries. We indulged in a delightful low-bush cranberry pie, its tartness a perfect counterpoint to the rich flavors of the evening, and a creamy salmonberry cheesecake, offering a unique taste of the Alaskan wilderness. Each dish was a celebration of Cordova’s natural bounty and the community’s culinary prowess.

Mornings on the Harbor: Boats, Bagels, and Buoys

The following morning began with another invigorating dock walk, followed by a casual yet unforgettable bagels-and-lox breakfast aboard fisherman John Bocci’s boat. As we ventured out into the serene harbor, we were treated to captivating views of local wildlife—seals and sea lions playfully lounging on the buoys, their calls echoing across the water. John, a seasoned veteran of the Alaskan seas, shared fascinating experiences and captivating fishing stories, painting vivid pictures of life and challenges on the open water. His generosity and welcoming spirit were palpable, even when I, in a clumsy moment, managed to spill coffee all over the floor of his sleeping cabin. It was a small, humorous incident that only added to the warmth of the morning.

Culinary Delights: The Best Fish Taco in Alaska

After our delightful boat ride, it was time for lunch, and we headed to a local institution: Baja Taco. This unassuming, tiny food truck, cleverly converted from a school bus, operates only during the summer months and holds the prestigious title of being voted the best fish taco in all of Alaska. We were incredibly fortunate to experience its renowned glory firsthand.

It marked my first time trying salmon-battered tacos, served with crisp cabbage and a zesty chipotle mayo. The tacos were as incredibly delicious as they sounded, a perfect blend of fresh, flaky salmon and vibrant flavors. It truly speaks volumes about the exceptional quality of Copper River salmon when you can enjoy it enthusiastically at virtually every meal for four consecutive days and still crave more. Each bite reinforced the versatility and superior taste of this Alaskan delicacy, even in an unexpected form like a taco.

An Unforgettable Foray: Wild Mushroom Foraging in Cordova

Later that afternoon, we embarked on what was arguably one of the most unique and memorable experiences of the entire trip: wild mushroom foraging. Every September, the Cordova Chamber of Commerce hosts the highly anticipated Cordova Funghi Festival, an event that draws visitors from across the country. This three-day festival is a deep dive into the fascinating world of fungi, offering participants the chance to learn about local mushroom varieties, master foraging techniques, and enjoy a spectacular wild food banquet prepared by a visiting chef.

During our trip, the honored visiting chef was Derek Baril from Wild Standard in Boulder, Colorado, who happened to be one of our fellow travel companions. What’s remarkable is that many of Cordova’s seasoned fishermen and fisherwomen are also passionate and skilled mushroom foragers. We were incredibly fortunate to join one of the most enthusiastic and talented among them, Curly Hershlieb, for our afternoon expedition.

Armed with traditional wooden baskets, we ventured into the dense Alaskan woods – a true wilderness experience, as there were no discernible paths, just a rich, untouched forest floor. The surroundings were nothing short of surreal; the woods were incredibly lush, vibrant green, and draped in thick, ancient moss. The ground beneath our feet felt alive, a carpet of decomposing organic matter that was a spectacle in itself. It was an awe-inspiring environment, showcasing nature’s intricate beauty.

The Surprising Connection Between Salmon and Fungi

During our foraging adventure, we learned about a fascinating ecological synergy: the direct link between Copper River salmon’s life cycle and the proliferation of wild mushrooms in Cordova. As salmon complete their arduous journey upstream to spawn, many are caught by predators like hawks, eagles, and other birds. These birds often carry the salmon carcasses into the surrounding forests, where, upon decomposition, their rich nutrients are returned to the soil. This natural fertilization process plays a vital role in sustaining the lush forest ecosystem and directly supports the growth and diversity of wild mushrooms. It’s a powerful illustration of nature’s perfect, sustainable cycle, where one life cycle directly nourishes another.

While many of the mushrooms we encountered were inedible, Cordova is home to a remarkable variety of delectable wild mushrooms, including highly prized winter chanterelles, oyster mushrooms, chicken of the woods, and hedgehog mushrooms. We dedicated nearly two hours to our quest, slowly meandering through the forest, our eyes keenly peeled for these hidden treasures. The satisfaction of spotting a prime specimen amidst the dense undergrowth was immense. That evening, Julia and I had the pleasure of preparing all the edible mushrooms we had foraged. These earthy delights were incorporated into our final potluck dinner, served alongside a magnificent whole Coho salmon, freshly caught two days prior by the husband of Christa, one of Copper River Salmon’s executive directors. It was a meal that truly celebrated the bounty of Cordova, from both its waters and its forests.

The Thrill of the Catch: Sport Fishing on the Eyak River

Our last full day in Cordova was dedicated to another quintessential Alaskan experience: sport fishing with the local Orca Adventure Lodge on the stunning Eyak River. For the first time in my life, I donned full waders, ready to immerse myself in the river’s currents. In fact, this was only my second time fishing in my 29 years, making the experience all the more novel and exciting. I’m not entirely sure what captivated me more – the breathtakingly remote, quiet, and tranquil surroundings, or the profound appreciation I had developed for these magnificent salmon over the previous three days. Regardless, I absolutely cherished every moment of the experience.

It happened to be a slightly slower day on the river, and after more than seven hours of dedicated effort, our group of four managed to catch five salmon. Fishing here is far from easy work; it demands patience, skill, and respect for nature. To my utter amazement and delight, I was responsible for catching two of those five fish! The lodge’s team expertly filleted and flash-froze our catches, preparing them perfectly for our flight home the next day. My freezer is now proudly stocked with over 10 pounds of fresh Coho salmon, a delicious reminder of this incredible journey that I eagerly anticipate enjoying over the coming months.

A Sustainable Cycle: Witnessing Salmon Spawning at Power Creek

On our final morning in Cordova, with just a few hours before our flights home, we made a quick but impactful visit to the spawning streams at Power Creek. Here, the salmon were just beginning their vital spawning ritual, completing the full, incredible cycle of their lives. Witnessing this natural phenomenon, where life returns to its origins to ensure the next generation, was a powerful and moving experience. It was a tangible representation of the sustainable cycle that underpins the entire Copper River salmon industry and the health of the Alaskan ecosystem.

This trip will forever leave an indelible mark on me, and I hope, through these shared words and images, on you as well.
