We navigated the bustling New York City metro, heading downtown to one of the most prestigious culinary institutions in the world: the French Culinary Institute (FCI), now known as the International Culinary Center (ICC). Nestled prominently on Broadway Street, the sheer scale of the school’s facilities immediately impressed us. Spanning a vast 69,000 square feet, this culinary haven promised an immersive experience into the heart of professional cooking and baking.

Upon reaching the admissions department, we were warmly greeted by the Assistant Director of Admissions. Her enthusiasm was infectious, setting the tone for what would be an incredibly informative and inspiring tour. We spent a few initial minutes discussing the various programs and the philosophy behind FCI’s renowned education before embarking on our grand exploration of the campus.

The first thing that struck us was the impeccable condition of the facility. Having undergone significant renovations just a few years prior, everything appeared in mint condition, reflecting the high standards of a world-class culinary school. Our journey began in the general culinary school kitchens. These expansive spaces were a chef’s dream, meticulously organized and packed with every imaginable piece of equipment. From gleaming full ranges and convection ovens to specialized tools for every culinary task, it was clear that students here had access to the best resources to hone their skills.

Next, we transitioned to the vibrant world of baking and pastry. As classes for the day had concluded, we were able to step directly into the classrooms, which were cleaned to an astonishing level of perfection. The air, however, still carried the faint, sweet aroma of the day’s creations. This was perhaps the most delightful part of the tour, as we were generously offered samples of some of the day’s baking concoctions. We indulged in exquisite salted caramel chocolates, a perfect balance of sweet and savory, and melt-in-your-mouth homemade Turkish delight, each bite a testament to the students’ skill and the quality of instruction at FCI.

Our tour continued to the bread baking classrooms, an area that truly showcased FCI’s dedication to specialized culinary arts. The school offers a unique three-month career course entirely devoted to the intricate craft of bread making, a testament to the growing appreciation for artisanal bread. The director of this department, a truly passionate individual, went above and beyond. He kindly stepped into a classroom and emerged with a freshly baked loaf of bread, still warm from the oven, offering it to me to take home. This unexpected gesture instantly became the best “goodie bag” I could have ever asked for – a tangible piece of FCI’s culinary magic.

Beyond the kitchens, we also explored the school library, a treasure trove for any culinary enthusiast. It was brimming with thousands of cookbook titles, culinary journals, and every imaginable resource for aspiring chefs and food historians alike. The sheer volume and variety of materials available underscored the institute’s commitment to both practical training and academic enrichment. While I was thoroughly impressed with every aspect of the school, what truly stood out was the infectious enthusiasm and profound passion conveyed by the director. His deep love for the culinary programs offered at FCI, coupled with his personal passion for food in general, shone through every word, making the visit truly inspiring and leaving a lasting impression of dedicated excellence.

A Taste of Thailand: Dinner at Kin Shop NYC

After bidding farewell to the French Culinary Institute, Connor and I rendezvoused with my sister and her boyfriend, making our way back to her apartment to freshen up. The evening’s plans involved an eagerly anticipated dinner at Kin Shop, a highly acclaimed Thai restaurant in NYC. Reservations had been secured weeks in advance, and the excitement among us was palpable. Kin Shop had become a significant talking point in the city’s culinary circles, primarily due to its executive chef, Harold Dieterle, the celebrated winner of the inaugural season of Top Chef.   • Squid Ink & Hot Sesame Oil Soup: Utterly delicious and deeply flavorful, this unique soup combined the richness of squid ink with succulent pieces of squid, savory ground brisket, and crisp snake beans. It was undoubtedly worth the trip and every bit of the hype surrounding it, solidifying its reputation as a must-visit destination for modern Thai cuisine in New York City.

Sweet Endings and Greenwich Village Charm

Despite the incredibly satisfying dinner, the four of us, in true foodie fashion, decided to save room for dessert. The allure of a sweet treat beckoned, and conveniently, Kin Shop was situated very nearby the charming streets of Greenwich Village. We embarked on a leisurely post-dinner stroll, soaking in the vibrant, bohemian atmosphere of this iconic neighborhood. The historic brownstones, quaint shops, and lively street scenes made for a perfect evening walk. Our quest for the perfect dessert led us to discover some delicious gelato, though I am momentarily blanking on the specific name of the delightful establishment we chose. However, during our exploration, we also spotted a fascinating new gelato place called PopBar, which offered the novel concept of artisanal gelato on a stick. This innovative approach to a classic treat instantly captured our attention – very cool indeed!

Morning Delights: Agata & Valentina and Central Park

Feeling incredibly full from our culinary adventures and a bit chilled by the evening air, we decided to hail a taxi back to the apartment, ensuring a good night’s rest before our bus journey back to DC the following afternoon. The next morning in NYC began with a quintessential New York breakfast: fresh, chewy bagels, a perfect start to another day of urban exploration. Our agenda then led us to the renowned Italian specialty shop, Agata and Valentina. This gourmet emporium is a paradise for food lovers, boasting an incredible selection of high-quality imported goods, fresh produce, artisanal cheeses, and delectable prepared foods. The aroma alone was intoxicating, and I couldn’t resist picking up some unique goodies and pantry staples to bring back home, ensuring a piece of New York’s culinary magic traveled with me.

The sheer amount and astonishing variety of culinary delights you can discover at even the seemingly tiny grocery stores and specialty shops in New York City is truly astounding. It’s a gastronomic landscape that, in my experience, is simply not comparable to any other city. The access to fresh, diverse, and high-quality ingredients from around the world is a defining characteristic of NYC’s food culture, reflecting its status as a global metropolis.

Before heading to the bus station, we indulged in a quintessential New York experience: a tranquil stroll through the iconic Central Park. This sprawling urban oasis provided a welcome respite from the city’s ceaseless energy, offering picturesque landscapes, serene pathways, and stunning views of the surrounding skyline. It was the perfect way to unwind and reflect on the incredible culinary and cultural experiences of our trip. Luckily, throughout our whirlwind adventure, I managed to keep track of all my belongings – and most importantly, that precious, freshly baked loaf of bread from the French Culinary Institute, a delicious souvenir of a truly memorable culinary journey in New York City.
