Ingredients

  • 20 raw whole almonds
  • 2 cups (480 mL) low-fat or whole milk
  • ½ teaspoon ground turmeric
  • ¼ teaspoon ground cardamom
  • pinch saffron threads
  • 2-3 teaspoons granulated sugar or to taste (honey or maple syrup also work)
  • crushed pistachios for garnishing (optional)

Instructions

  • Prepare Almond Paste: Place the raw almonds in a heatproof bowl and cover them with very hot, freshly boiled water. Let them soak for 10 to 15 minutes. Once softened, carefully peel off the skins from each almond using your fingers. Transfer the peeled almonds to a high-powered blender and grind them into a fine powder. Add a couple of tablespoons of the measured milk to the blender and continue blending until a smooth, fine almond paste forms.
  • Infuse the Milk: Pour the remaining milk into a small saucepan and place it over medium heat. As the milk begins to warm, add the freshly prepared almond paste, ground turmeric, ground cardamom, saffron threads, and granulated sugar (or your preferred sweetener). Stir all ingredients together thoroughly. Bring the mixture to a gentle simmer for 4 to 5 minutes, whisking continuously throughout this period to prevent a skin from forming on the surface. Taste the milk and add more sugar if you desire a sweeter drink.
