Get ready to embrace the ultimate summer treat! The much-anticipated Popsicle Week is finally here, and I’m thrilled to join the celebration with these incredible layered Mango Lassi Popsicles. Just one look, and you can tell how wonderfully refreshing they are.
I’ve been dropping hints about this exciting event for a few weeks, and the day has arrived! My good friend, Billy, from Wit and Vinegar, has been the brilliant mind behind this annual internet extravaganza since 2014, and this year marks my very first participation. It’s an honor to be part of such a creative and delicious gathering of frozen treat enthusiasts.
It surprisingly took me three years to finally invest in a proper popsicle mold (and yes, this is the exact one I used and highly recommend!), but once I did, it arrived at my doorstep in less than 48 hours. Sometimes, the best things are worth the wait – and the quick delivery!

The Philosophy Behind These Simple & Healthy Mango Popsicles
For a good couple of months, I found myself deep in thought, brainstorming countless popsicle recipes and constantly weighing different ideas. I’ll be completely candid: I was initially tempted to create something incredibly intricate and complex, involving several elaborate steps. However, as I considered it more, I kept returning to a fundamental truth:
It’s just a darn popsicle! By their very nature, popsicles are meant to be fun, easy, and low-maintenance. They’re enjoyed on a stick, offering simple, unpretentious joy. Complicating them felt like missing the point entirely.
Let’s be realistic: we are all much more likely to whip up homemade frozen treats regularly if the recipe is straightforward and requires minimal fuss and clean-up. And that’s precisely what these **Mango Lassi Popsicles** offer: a simple, no-stress approach to a truly delicious and satisfying dessert. They are crafted with real, wholesome ingredients that make you feel good inside and out. This recipe proves that you don’t need fancy techniques to achieve extraordinary flavor and texture in your summer desserts.

The Inspiration: Mango & Yogurt – A Match Made in Heaven
I’ve always been a huge fan of fruit-based popsicles. Mango, in particular, holds a special place in my heart when it comes to frozen desserts. Its naturally tart and sweet profile, combined with its ability to create a thick puree, makes it an ideal candidate for popsicles. This thickness naturally contributes to a less icy texture, especially if you prefer to keep added sugars to a minimum. Mango also stands up exceptionally well to freezing, maintaining its delightful flavor and vibrant color.
Beyond the mango, I knew I wanted a creamy base, preferably yogurt-based, to add a rich, natural creaminess and a delightful tang. The moment I thought of mango and yogurt, my mind immediately drifted to the beloved Indian mango lassi – a wonderfully creamy and refreshing drink typically made with fresh mango, milk, and yogurt. This traditional beverage served as the perfect inspiration for these layered frozen treats.
The layered effect in these popsicles makes them a beautiful “deconstructed” mango lassi, allowing each component to shine while harmoniously blending together with every bite. The name “Mango Lassi Popsicles” simply stuck, as it perfectly encapsulates the essence of this delightful fusion.

Key Ingredients for Creamy, Perfectly Textured Popsicles
To achieve the luscious, creamy texture that sets these Mango Lassi Popsicles apart, we use a carefully selected combination of ingredients:
- Whole-Fat Greek Yogurt: This provides the foundational creaminess and a pleasant tang, characteristic of a traditional lassi. The whole fat content is crucial for a smooth, less icy freeze.
- Full-Fat Coconut Milk: Stirred well before use, full-fat coconut milk adds an incredible richness and subtle tropical flavor that complements the mango beautifully. Like the Greek yogurt, the full-fat version is essential here.
A word of caution: Do not substitute lower-fat versions of either the Greek yogurt or the coconut milk. Lower-fat alternatives contain a higher water content, which will inevitably lead to a significantly icier, less creamy popsicle. For that wonderfully smooth, melt-in-your-mouth texture, stick to whole-fat ingredients.
The yogurt base is subtly sweetened with pure maple syrup, offering a natural sweetness without being overly sugary. This recipe is designed to be very lightly sweetened, relying heavily on the natural sweetness of the ripe mango puree. You might find the yogurt base tastes quite sweet at room temperature, but remember that sweetness mutes when frozen, resulting in a perfectly balanced flavor once chilled. For an extra layer of gourmet flavor, I highly recommend adding a touch of my favorite vanilla bean paste (or a scraped vanilla bean for that artisanal touch!).
The Science Behind Sugar in Popsicles: Why It Matters
You might wonder why we add sugar to popsicles, even when aiming for a “naturally sweetened” treat. The answer lies in the fascinating science of freezing. Added sugar is a critical component for more than just flavor and sweetness; it plays a vital role in preventing frozen desserts like popsicles, ice creams, and sorbets from developing large, unappealing ice crystals once frozen. Sugar molecules literally interfere with water molecules, breaking them up and preventing them from coalescing into one solid, icy mass during the freezing process. This results in a smoother, more palatable texture.
On the other hand, there’s a delicate balance. Too much sugar can cause ice cream or popsicles to become too soft, almost slushy, even when thoroughly frozen. This is the worst-case scenario for a popsicle, as it won’t hold its shape or provide that satisfying bite. But don’t fret! These Mango Lassi Popsicles are perfectly formulated to strike that balance. They hold up extremely well once removed from the freezer, offering a delightful bite without being overly hard. In fact, I often prefer to let them ‘temper’ at room temperature for about 5 to 10 minutes before eating, which enhances their creamy texture and intensifies the flavors.

Making the Perfect Layered Mango Lassi Popsicles
Crafting these layered popsicles is surprisingly simple and a joy to do. The key is to alternate pouring your creamy yogurt mixture and your vibrant mango puree into the popsicle molds. While the specific number of layers is up to your artistic preference, two distinct layers of each typically create a beautiful visual effect and ensure a balanced flavor profile throughout the popsicle.
Tips for Success:
- Choose Ripe Mangoes: For the best flavor and sweetness, select ripe Champagne (Ataulfo) mangoes. They have a naturally smooth, non-fibrous flesh perfect for pureeing.
- Full-Fat is Key: As mentioned, stick to whole-fat Greek yogurt and full-fat coconut milk for the creamiest texture and to prevent iciness.
- Don’t Rush the Freeze: Allow at least 6 hours, or preferably overnight, for the popsicles to freeze completely solid. Patience is rewarded with perfectly firm treats.
- Easy Demolding: The hot water bath technique is a game-changer for effortless removal. Just 10-15 seconds in warm water will gently loosen the popsicles without melting them.
- Pre-Chilling for Firmness: After demolding, placing the popsicles on a parchment-lined baking sheet back into the freezer for another 15 minutes ensures they are perfectly firm for serving and handling.
- Storage: Once fully frozen and firm, transfer your popsicles to a large Ziploc resealable bag or an airtight container to prevent freezer burn and keep them fresh for up to 2-3 weeks.
These Mango Lassi Popsicles are not just a treat for your taste buds but also a feast for your eyes. They are incredibly satisfying to make and even more delightful to enjoy on a warm day, or any day you crave a healthy, vibrant, and creamy frozen dessert. They are proof that healthy eating can be utterly delicious and fun.

Ingredients
- 1½ cups (337 g) whole-fat Greek yogurt
- ¾ cup (180 mL) full-fat coconut milk stirred well
- ¼ cup (60 mL) pure maple syrup
- 1 teaspoon pure vanilla bean paste or 1 scraped vanilla bean
- 2 ripe Champagne (ataulfo) mangos peeled, pitted, and roughly pureed in a small food processor
Instructions
-
In a medium mixing bowl, whisk together the Greek yogurt, coconut milk, maple syrup, and vanilla bean paste until thoroughly combined. Transfer this creamy mixture to a large measuring cup or any container with a convenient spout for easy, mess-free pouring into the molds.
-
Carefully layer the whisked yogurt mixture and the pureed mango into the popsicle mold. You can alternate layers according to your preference for a beautiful visual effect. We suggest pouring two distinct layers of each for an ideal balance in flavor and appearance, filling all ten molds. Gently insert wooden popsicle sticks into each mold (ensuring they protrude by about 1½ inches for easy handling), then secure the mold with its lid. Freeze for a minimum of 6 hours, or ideally overnight, until the popsicles are completely solid and firm.
-
To easily remove the popsicles from the mold: First, gently remove the popsicle mold cover. Fill a very large mixing bowl with hot tap water. Carefully place the popsicle mold into the hot water bath (ensuring the top side remains up to prevent water from entering the molds) for approximately 10 to 15 seconds. For particularly stubborn molds, you may extend this slightly. This brief warm bath will very slightly soften the outer edges of the popsicles, allowing them to release effortlessly. Remove the popsicle mold from the water bath, gently pull out each popsicle, and transfer them to a small baking sheet lined with parchment paper. Place the baking sheet back into the freezer for an additional 15 minutes to firm up slightly before serving. For longer storage, transfer the fully frozen popsicles to a large Ziploc resealable bag or an airtight container.
Tips for Success:
- As detailed in the article, added sugar is essential for preventing large, icy crystals in frozen desserts. It’s a crucial component for optimal texture, not just sweetness. Sugar molecules effectively disrupt water molecules from forming one solid, hard mass during freezing, resulting in a smoother, more enjoyable popsicle.
- Always use ripe mangoes for the best flavor and natural sweetness. Ataulfo (Champagne) mangoes are highly recommended for their smooth, non-fibrous texture.
- For the creamiest results, resist the urge to use low-fat yogurt or coconut milk. The higher water content will lead to icier popsicles.
- Allow your popsicles to temper for 5-10 minutes at room temperature before eating. This slight softening enhances their creamy texture and brings out their full flavor.
