Discovering the Delicate Charm of Fennel

Fresh Fennel Bulb ready for shaving

Fennel, with its intriguing bulbous base and feathery fronds, is a versatile vegetable that deserves a place in every kitchen. Its distinct anise (licorice-like) flavor can sometimes be polarizing, but when prepared with care, especially in its raw form, it transforms into something truly exquisite. My journey with fennel began with a love for its caramelized sweetness when grilled, but more recently, I’ve become infatuated with its most delicate presentation: raw and thinly shaved. This method mellows its assertive flavor, leaving behind a subtle, pleasant hint of anise that is incredibly refreshing and never overpowering. The result is a remarkably crisp and tender texture that forms the delightful backbone of this salad.

Beyond its unique taste and texture, fennel is also a nutritional powerhouse. It’s an excellent source of Vitamin C, potassium, and fiber, contributing to good digestion and overall wellness. Incorporating this aromatic vegetable into your diet can add not only a sophisticated flavor profile but also significant health benefits, making this `shaved fennel salad` a smart and delicious choice.

The Secret to Unbeatable Crispness: An Ice Water Bath

Bright orange segments for a vibrant salad

While making a salad might seem like one of the simplest kitchen tasks, achieving and maintaining that desired crisp texture can sometimes be a subtle art. This challenge becomes particularly apparent when you’re preparing ingredients in advance, as thinly sliced vegetables, like fennel, tend to lose their fresh snap and vitality rather quickly. However, there’s a simple, chef-approved trick that guarantees your shaved fennel remains wonderfully crisp and vibrant: an ice-cold water bath.

Never underestimate the transformative power of ice water. For a salad where crunch is a key textural component, it’s highly recommended to soak your thinly shaved fennel in a large bowl of ice water for approximately 5 to 10 minutes. This technique works by rapidly rehydrating the vegetable’s cells, causing them to plump up and firm their structure. The result is an incredibly crisp texture that makes a world of difference in the overall enjoyment of the salad. This trick isn’t just for fennel; it’s equally effective for other ingredients like radishes, frisée, carrots, or even tired lettuce leaves that need a revitalizing boost.

A Crucial Step: After its refreshing soak, it’s absolutely essential to thoroughly dry the shaved fennel. Any lingering moisture will dilute your exquisite lemon-olive oil dressing and prevent it from properly adhering to the ingredients. For best results, use clean kitchen towels to gently pat the fennel dry, or simply employ a salad spinner to efficiently remove excess water. This small but significant step ensures your salad achieves maximum flavor and the perfect, uncompromised texture.

A Symphony of Flavors: Fennel, Orange, and Pecorino

With your fennel perfectly prepped and crisp, the final assembly of this `orange and pecorino salad` is quick and easy. The dressing is a testament to the beauty of simplicity: a classic vinaigrette crafted from freshly squeezed lemon juice and high-quality extra virgin olive oil. The bright, zesty acidity of the lemon acts as a perfect counterpoint, cutting through the richness and elevating the flavors, while the olive oil provides a smooth, luxurious base with subtle fruity undertones. A simple seasoning of kosher salt and freshly ground black pepper is all that’s required to complete this effortlessly elegant dressing.

The magic truly happens when these three main ingredients—crisp fennel, sweet oranges, and salty Pecorino—are brought together:

  • The Fennel: Offers a delicate, almost ethereal crunch and its signature mild anise notes, providing a refreshing textural and aromatic foundation.
  • The Oranges: Burst with juicy sweetness and vibrant citrus tang. Using carefully segmented navel oranges ensures each bite is free of pith and membrane, delivering pure, unadulterated fruit flavor that beautifully complements the fennel.
  • The Pecorino Cheese: This hard, salty Italian sheep’s milk cheese, often Pecorino Romano or Sardo, introduces a bold, funky, and subtly peppery depth. Its robust flavor is what ties all the elements together, providing a compelling savory balance to the sweet and fresh components. The `salty pecorino` is truly the `umami` touch that elevates this simple salad.

The interplay between the subtle anise of the `crisp fennel`, the juicy sweetness and acidity of the `fresh oranges`, and the pungent saltiness of the `pecorino cheese` creates an incredibly dynamic and addictive flavor profile. It’s a `healthy salad` that feels indulgent, perfect for a `light lunch` or an `elegant side dish` for any occasion.

Its light and zesty character shines when served alongside grilled lean proteins such as chicken or fish, providing a refreshing contrast that brightens the entire plate. To enhance the visual appeal and add an extra layer of flavor, garnish your plated salad with a sprinkle of fresh fennel fronds – the delicate, feathery greens from the top of the fennel bulb. For an added textural dimension, a light scattering of toasted nuts like pistachios or sliced almonds can introduce a wonderful crunch and subtle nuttiness. Customizing Your Fennel Salad: Endless Possibilities

While this recipe is perfect in its classic form, it also offers a fantastic foundation for culinary creativity. Feel free to experiment with variations to suit your personal taste or to utilize ingredients you have on hand:

  • Alternative Cheeses: If Pecorino isn’t available or preferred, thinly shaved Parmesan cheese, crumbled goat cheese for a creamy tang, or even a robust feta cheese would work wonderfully.
  • Fresh Herbs: Introduce other fresh herbs like chopped mint, parsley, or dill for an added layer of aromatic freshness that complements the fennel and citrus beautifully.
  • Boost the Crunch: Beyond the fennel, toasted pine nuts, walnuts, or even thinly sliced radishes can contribute additional textural complexity.
  • Make it a Main: Transform this `side salad` into a more substantial meal by adding cooked elements such as grilled shrimp, flaked salmon, shredded rotisserie chicken, or chickpeas for a plant-based protein boost.

This simple salad combines shaved fennel, fresh orange segments, salty pecorino cheese, and a basic lemon vinaigrette. An elegant winter citrus salad!

Ingredients

  • 1 large fennel bulb
  • 1 navel orange
  • 2 tablespoons (30 mL) fresh lemon juice
  • tablespoons (22 mL) extra virgin olive oil
  • freshly ground black pepper
  • kosher salt
  • pecorino cheese shavings
  • fennel fronds for garnishing

Instructions

  • Trim the tops of the fennel bulb. Cut lengthwise into quarters. Trim the core. Using a mandolin, shave the fennel into very thin slices. Place the shaved fennel in a large bowl of ice water for 5 to 10 minutes, while you prepare the rest of the ingredients. This step will add a lovely crispness.
  • Trim both ends of the orange. Using a sharp paring knife and edges of the orange as a guide, cut off the peel of the orange, removing all of the white pith. Using the knife, carefully segment the orange by slicing between the membrane and the fruit. Set the orange segments aside.
  • Place the lemon juice in a large salad bowl. Slowly pour in the olive oil, whisking to emulsify. Season with salt and pepper to taste.
  • Remove the shaved fennel from ice water. Pat dry with kitchen linens (or alternatively, carefully dry in a salad spinner). Add the shaved fennel to the salad bowl. Toss with the vinaigrette and season with additional salt and pepper as needed. Plate and top with orange segments and shaved pecorino cheese. Garnish with fennel fronds.  Serve immediately.
